Chimichurri
1 cup packed fresh parsley leaves, finely chopped
½ cup fresh Mint, finely chopped
1/2 cup fresh basil, finely chopped
5 medium cloves garlic, peeled and finely chopped
3/4 cup best extra-virgin olive oil
1/4 cup lemon juice
Salt
Red pepper flakes
Steep garlic in olive oil for 1 hour. Blend rest of ingredients and steep for half hour.
Spoon over grilled meat or fish.
This is only good fresh
